It's an interesting article on how to have 5 completely different healthy dishes from 1 chicken with minimal cost.

The white chilli sounds particularly interesting.

When I cook a chicken, immediately after eating, I strip the meat from the carcass, boil the bones for stock, put the meat in the fridge, save the leftover veggies for hash in the morning for breakfast, make a couple chicken sandwiches for the wife and I for lunch the next day.

Usually have leftover chicken stir fry with leftover gravy for supper the next day, more chicken sandwiches for lunch, then use up the last of the chicken for a big pot of chicken veggie soup the day after that usually lasts a few days on it's own.

I estimate that one chicken and some veggies gets me about 8-10 meals for my wife and I and our little girl.

Interesting!

Worth noting though is a few of the ingredients in the meal plan would be two to three times as expensive here in Canada.

That chicken would definitely be $12-15 here, the yogurt and cheese would be much more also. But still, you can definitely make a chicken go pretty far.

I got the ingredients for about $45, so still not bad, so far the recipes have been quite good. Not even thinking of the money angle, these are just some nice healthy(ish) meals

I do pretty much the same thing, only with turkey. I will cook a turkey supper just for the sandwiches. YUM. Or you can dice up the turkey, put it in gravy, then on a bun and have a burger a la the Chickenburger in Sackville.

And the soup afterward...is always the best. Turkey, barley, potatoes, carrots...delish! I'd put more veggies in (broccoli) if my kids would eat it.

My soups are usually loaded with carrots, onions, celery, potatoes, turnip, parsnip, peas, barley or rice, with maybe cilantro thrown in or fresh ginger and garlic (garlic greens right now as they are growing in my garden).

I usually season with salt, pepper, summer savoury, rosemary and sometimes I'll add curry powder or maybe something like cayenne and seasoned salt.
